Ingredients
  

  • 6 pieces Flour Tortillas
  • 6 eggs Eggs
  • 1/2 cup Milk
  • 1 cup Cheese shredded (cheddar, Monterey Jack, or a blend of Mexican cheeses)
  • 1 cup Bell Peppers diced
  • 1/2 cup Onions diced
  • 1 cup Spinach fresh
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Paprika

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cut the tortillas into quarters or strips. Optionally, lightly toast them in a dry pan to add crispness.
  • In a bowl, whisk together the eggs, milk, salt, pepper, and paprika.
  • In a greased baking dish, layer the tortillas, followed by sautéed vegetables (bell peppers, onions, spinach). Pour the egg mixture over the layers.
  • Top with shredded cheese and repeat the layering until all ingredients are used.
  • Bake for 35–40 minutes or until the quiche is golden brown and the eggs are fully set.

Notes

Feel free to customize the quiche by adding meats like bacon, sausage, or chicken, or use more vegetables to suit your preferences. For a gluten-free version, you can use corn tortillas instead of flour tortillas.
