- 100-120ml pasta water (reserve from cooking)

- Boil pasta in salted water until al dente, reserving 100-120ml of the pasta water.
- In a pan, heat oil over medium heat and sauté minced garlic until light golden.
- Add chicken pieces and cook until they turn white throughout.
- Stir in salt, black pepper, red chilli powder, garlic powder, paprika, onion powder, and oregano; add tomato paste and sriracha, cooking for about 1 minute.
- Add milk and cream; simmer over medium-high heat until the sauce begins to bubble and thickens slightly, stirring continuously.
- Add mozzarella cheese and stir until melted and incorporated into the sauce.
- Add reserved pasta water gradually to loosen the sauce and bring to a boil, stirring.
- Add cooked pasta to the sauce and toss to coat; sprinkle remaining cheese on top and cover over low heat until cheese melts.
- Serve hot.
