Preparation
  1. Preheat your oven to 375°F (190°C). Prepare a 15x10-inch jelly roll pan by covering it with parchment paper. Gather all ingredients for easy access during mixing.
  2. In a mixing bowl, beat the eggs and sugar together until thick and light in color.
  3. In a separate bowl, sift together the flour, baking powder, and any desired spices to create a uniform dry mix.
Mixing and Assembling
  1. Carefully fold the dry ingredients into the egg mixture to maintain airiness.
  2. Add milk and vanilla extract to the batter and mix until smooth.
  3. Pour the mix into the prepared pan, spreading it evenly.
Cooking and Finishing
  1. Bake in the preheated oven for about 12-15 minutes, or until the cake bounces back upon light pressure.
  2. Remove immediately and invert onto a clean kitchen towel sprinkled with sugar. Peel off parchment and roll the cake along with the towel.

Notes

Can be prepared a day in advance. Store it in an airtight container in the refrigerator for up to 3 days or freeze for longer preservation. Vegan version possible by substituting eggs and using plant-based ingredients.
