Preparation
- Preheat your oven to 375°F (190°C). Prepare a 15x10-inch jelly roll pan by covering it with parchment paper. Gather all ingredients for easy access during mixing.
- In a mixing bowl, beat the eggs and sugar together until thick and light in color.
- In a separate bowl, sift together the flour, baking powder, and any desired spices to create a uniform dry mix.
Mixing and Assembling
- Carefully fold the dry ingredients into the egg mixture to maintain airiness.
- Add milk and vanilla extract to the batter and mix until smooth.
- Pour the mix into the prepared pan, spreading it evenly.
Cooking and Finishing
- Bake in the preheated oven for about 12-15 minutes, or until the cake bounces back upon light pressure.
- Remove immediately and invert onto a clean kitchen towel sprinkled with sugar. Peel off parchment and roll the cake along with the towel.
- Once cooled, unroll the cake, spread your chosen filling, and roll it back up securely. Decorate as desired.
Notes
Can be prepared a day in advance. Store it in an airtight container in the refrigerator for up to 3 days or freeze for longer preservation. Vegan version possible by substituting eggs and using plant-based ingredients.
