Lemon Pasta

Ingredients
  

  • 200 g Pasta spaghetti or linguine
  • 2 Lemon juice and zest
  • 2 tbsp Olive oil extra virgin
  • 2 cloves Garlic minced
  • 2 tbsp Fresh parsley chopped
  • optional to taste Parmesan cheese grated
  • 1 cup Pasta water reserved

  • Pot for boiling pasta

Method
 

  1. Boil salted water in a pot and cook pasta al dente. Reserve 1 cup of pasta water before draining.
  2. In a pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add lemon juice and zest to the pan, then toss the cooked pasta into the sauce.
  4. Add pasta water a little at a time to emulsify the sauce. Toss to coat the pasta.
  5. Garnish with fresh parsley and grated Parmesan cheese. Serve immediately.

Notes

Feel free to experiment by adding shrimp or chicken to the pasta for added protein, or use plant-based alternatives to make it vegan.
