- Boil salted water in a pot and cook pasta al dente. Reserve 1 cup of pasta water before draining.
- In a pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
- Add lemon juice and zest to the pan, then toss the cooked pasta into the sauce.
- Add pasta water a little at a time to emulsify the sauce. Toss to coat the pasta.
- Garnish with fresh parsley and grated Parmesan cheese. Serve immediately.
Notes
Feel free to experiment by adding shrimp or chicken to the pasta for added protein, or use plant-based alternatives to make it vegan.
